History
The Frankfurt beef sausage, in the Hessian dialect “Rindsworscht” is a boiled sausage made from beef, it was first offered in 1894 by the Frankfurt butchery Gref-Völsing in Frankfurt am Main. Frankfurter beef sausage is usually a slightly curved, rather squat sausage with a diameter of 32 to 34 mm and a weight of 100 to 120 grams, the skin is reddish brown to brownish and crisp. The sausage meat is fine, homogeneous and juicy and has a light pink to slightly reddish color. The taste of the sausage is hearty and strong. Cooking in hot smoke gives it a slightly smoky aroma. Frankfurter beef sausage is usually heated in a water bath, but occasionally also grilled or fried. Regionally, the Frankfurt beef sausage is also processed into currywurst (beef curry).
